What is a Luau you ask?
A Luau is a Hawaiian Party with a large Feast!
Most Luaus are Oceanside and set at Sunset time, generally lasting about 3 hours.

The majority of Hawaiian Luaus are all you can eat Hawaiian buffets, with an all U can drink bar including maitais, beer, wine, tropical drinks, cocktails, as well as sodas, juice and water.
Then there is the show itself! 1 hour of Hawaiian Hula and story telling of the ancient Hawaiian ways.
First hour is "cocktail hour' with Hawaiian music & entertainment.
Most of the Luaus on Maui now days have interactive games and demonstrations as you wander the Luau grounds.
* 2 favorites are the Imu Ceremony where they uncover the Pig that has been cooking in the underground Oven, & the other is the Coconut Husking demonstration. There are also several Samoan & Tongan crafters selling made on Maui crafts, sarongs & tikis.
Second hour is the Buffet!
They are all good! Help your self, as it is all you can eat ! Some favorites are the Kalua Pig, fresh Mahi Mahi (Dorado fish), Teriyaki Chicken, Hawaiian sweet Potatoes with a coconut glaze, lomi lomi salmon, and what's a Luaus with out the Poi? *hint dip your kalua pig into the poi.
Third Hour is the Hula Show! Sit back, relax and enjoy the Show. The various Hula shows differ depending on which Luau you choose. All are enjoyable, most will have a Fire Knife Dancer finale!
Origins of the Lu`au:
In ancient times Hawaiians would gather together to celebrate important occasions with a large feast. These celebrations were held for many reasons: to celebrate accomplishments, honor important people and commemorate great events or the birth of a new child.
It was a time to pay homage to ancestral gods with song, dance, and offerings of food.
Lu‘au, in Hawaiian, means the young edible leaves of the taro plant. 
The life of Kanaka Maoli, the indigenous Hawai`i people, is closely linked to the Taro plant, and is believed to have the greatest life force of all foods. The leaves of the Taro plant were traditionally used to wrap food that was placed in an Imu (underground oven).
“Lu'au” is the most popular dish at these Hawaiian feasts, usually Chicken or Pork and young tender leaves of taro were baked with coconut milk, which is still popular today.
Taro and poi (pounded taro) are a means of survival for the Hawaiian people. By eating taro as poi, the protocol of Hawai`i is maintained. This is a ceremony of life that brings people together and supports a relationship of `ohana' (family) and of appreciation with the `aumakua' (ancestors).
Hawaiians of old, used a pit oven, called an imu, to steam whole pigs, breadfruit, bananas, sweet potatoes, taro, chicken, and fish. The imu is essentially an underground steam cooker. 
Due to the amount of time and labor to prepare the imu, most earth oven cooking was done for group meals, festivities, or religious ceremonies.
As the cooking process requires steam, green plant materials are needed to create the steam. Traditional plants used were ti leaves, banana leaves, and coconut palm leaf. The word kalua refers to the process of cooking in an earth oven.
For Hawaiian lu’aus they would bury the whole pig, letting it cook most of the day in the underground Imu.
While there are Luaus on all Islands, the Luaus on Maui are the most popular, especially the Old Lahaina Luau as it is like walking into a Hawaiian Village, with lots of young people in costume.
Most Hawaiian Luaus are at the Hotels, with a tropical garden setting, and ocean views. All are fun, with great food! I've yet to meet a Luau Buffet I didn't like! This is a perfect time to try some of those Tropical Hawaiian Drinks like the Blue Hawaii or Lava flow, as they are included in the price at the most of the Luaus on Maui.
Polynesian style Luaus will feature a Fireknife Dance finale from the Island nation of Samoa! Iffy at the Honua'ula Luau has won the world firekinfe dance championship 3 times, while the Luau at Makena resort features a 5 man fire knife dance pyramid!
